I am one of those people who takes meal prep very seriously, and one of the primary parts of this almost religious process is chicken breast. It has one of the highest protein contents by weight, at around 32 grams per 100 grams. And of course, there are endless ways to add some zest to it. Literally a million things! You can make anything with chicken. Adjust the recipe: cook everything else first, then add the chicken.
And despite all these benefits, I always end up having leftover chicken breast sitting in my fridge for days until it goes bad. Why? The dip comes together in about 55 minutes, including prep and cooking time, and yields multiple servings, making it ideal for feeding a crowd. Serve it hot with crunchy celery sticks, carrot sticks, crackers, or toasted bread for dipping.
Nachos
Season the shredded chicken breast with warm spices, garlic, and salsa, and mix thoroughly. Then layer a generous bowl of crispy tortilla chips with the flavorful chicken, black beans, and plenty of melted cheese, and bake until hot and bubbly.
Once out of the oven, fresh toppings like diced tomatoes, jalapeños, sour cream, avocado, and cilantro add brightness and texture.


Wraps
Start with shredded or sliced chicken breast, tossed with your choice of seasoning or a light sauce to keep it from drying out. I usually add mayo or cream cheese. Lay it over a soft tortilla or flatbread, then layer in crisp lettuce, tomatoes, cucumbers, and a drizzle of dressing or hummus.
Wrap it up tightly and you’ve got something quick, fresh, and far from boring.

Slice the leftover chicken and throw it into a hot pan with a little oil. Add sliced bell peppers and onions, letting them soften and char slightly at the edges. Season with cumin, paprika, garlic, salt, and a squeeze of lime so everything smells as good as it tastes.
Let the chicken heat through in all those spices, picking up the flavor from the pan instead of just sitting there.
Serve it sizzling with warm tortillas, then load it up with sour cream, guacamole, or salsa depending on how indulgent you’re feeling.
Club Sandwich
Layer sliced chicken breast between toasted bread with crispy bacon, lettuce, tomato, and a good spread of mayo. Season each layer lightly—salt on the tomatoes, a bit of pepper on the chicken—so it doesn’t taste flat.
Stack it high, press it down slightly, then slice into halves or quarters.
Pasta Dish

Start with a simple base of sautéed onions, garlic, carrots, and celery to build flavor before adding your broth. Once it’s simmering, add shredded chicken and let it gently warm through without overcooking.
Season as you go: salt, pepper, maybe some thyme or bay leaf, and let everything sit long enough for the flavors to actually come together.
Add noodles, rice, or keep it brothy depending on what you want, but either way it turns leftovers into something genuinely comforting.
Ground Chicken Pizza
Gluten-free and not so boring, this pizza involves chicken, parmesan, and eggs baked into a golden-crusted dough that you can douse with your favorite barbecue sauce, more cheese, BBQ chicken, and green onions.

Fried Rice
Start by chopping the leftover chicken into small, even pieces so it heats through quickly. In a hot pan or wok, add a bit of oil and sauté garlic, green onions, and any vegetables you have on hand—peas, carrots, bell peppers all work. Push everything to one side, scramble in an egg, then add your cooked rice, breaking up any clumps so it fries evenly.
Toss in the chicken last, along with soy sauce, a splash of sesame oil, and a bit of pepper. The key here is not to overcook the chicken—since it’s already cooked, you’re just warming it through. Leave it in the pan too long, and it dries out fast, so keep everything moving and finish quickly.
