I’ve been making basic tacos for years when I could’ve been making picadillo tacos instead.
Last week, I got tired of the usual ground beef tacos with seasoning packets, cheese, and lettuce. They’re easy, but honestly, they’re boring. So I tried picadillo tacos, and now I can’t stop thinking about them.
Picadillo tacos are rich, savory, slightly sweet, and packed with flavor, but they’re surprisingly simple to make. The combination of ground beef, tomatoes, olives, raisins, and spices creates tacos that taste way more impressive than the effort required.

What Is Picadillo?
Picadillo is a Latin American ground beef dish cooked in a tomato-based sauce with onions, garlic, spices, olives, and raisins.
The flavor is savory, slightly sweet, salty, and deeply comforting. The raisins add subtle sweetness, while the olives bring a briny contrast that makes the filling stand out from regular taco meat.
It’s commonly served in tacos, over rice, inside empanadas, or even in baked dishes.
Why These Tacos Work
What makes picadillo different is the balance of flavors.
- Tomatoes add richness
- Vinegar brightens everything
- Olives add saltiness
- Raisins bring sweetness
- Cinnamon adds warmth without overpowering the dish
The result tastes slow-cooked, even though it comes together in under 40 minutes. And before you get to the recipe, make sure to follow the following rules:
Ground beef quality: Use 80/20 ground beef if possible. You want enough fat for flavor, but not so much that it’s overly greasy.
Tomato paste importance: Don’t skip this. It adds concentration and depth that canned tomatoes alone can’t provide. It’s a flavor amplifier.
Olive selection: Use Spanish green olives with pits removed. Avoid the canned black olives at all costs—they’re completely different and won’t give you the same briny flavor.
