½ cup of old-fashioned rolled oats (certified gluten-free if needed)
1 tbsp chia seeds
¾ cup unsweetened almond milk (or any milk of choice)
½ cup of full-fat cottage cheese (4% milkfat recommended)
2 tbsp of cream cheese, softened
½ cup fresh strawberries, hulled (plus extra for topping)
1 tbsp of maple syrup or honey (adjust to taste)
1 tsp pure vanilla extract
2 tbsp crushed graham crackers (for topping)

INSTRUCTIONS

Add the almond milk, fresh strawberries, cottage cheese, cream cheese, maple syrup, and vanilla extract to a blender. Blend on high for about 30 to 45 seconds until the mixture is completely smooth and an even pale pink color. There should be no visible lumps of cottage cheese or cream cheese.
In a wide-mouth 16-oz mason jar or any airtight container, combine the rolled oats and chia seeds. Pour the blended strawberry mixture over the top and stir thoroughly until everything is evenly distributed. Make sure the chia seeds are well dispersed so they do not clump together at the bottom.
Seal the jar with a lid and place it in the refrigerator for a minimum of 8 hours, or overnight. During this time, the oats will absorb the liquid and soften, the chia seeds will swell and thicken the mixture, and all the flavors will come together into something much more developed than the sum of its parts.
In the morning, remove the jar from the fridge and give the oats a good stir. If the mixture looks thicker than you like, add a small splash of milk and stir again until you reach your preferred consistency. Top with fresh sliced strawberries and a generous scatter of crushed graham crackers for the cheesecake crust effect. Eat immediately, straight from the jar.
Stir the oats well before adding toppings. The chia seeds settle as the oats chill, and a good stir in the morning redistributes everything evenly throughout the jar.

NOTES

Use full-fat, 4% milkfat cottage cheese rather than low-fat. The extra fat is what gives the oats their luxuriously creamy texture. Low-fat versions can turn grainy once chilled. Good Culture whole milk cottage cheese works especially well — it blends particularly smoothly and has a clean, mild flavor that lets the strawberries and cream cheese shine.

Tips & Variations

The strawberry cheesecake combination is genuinely the best starting point, but once you have the base formula down, it is very easy to riff on. Any blendable fruit that pairs well with cream cheese will work.
Not a fan of cottage cheese, or simply do not have it? Full-fat Greek yogurt is the best substitute and produces a very similar result. It has a slightly stronger tang, which actually works well in the cheesecake flavor profile. Use the same quantity of cottage cheese called for in the recipe.
For the milk, almost anything works. Oat milk adds a gentle, natural sweetness. Coconut milk gives the oats a slightly tropical richness. Regular whole dairy milk is completely fine and gives a slightly creamier result than almond milk. The most important thing is that the milk is unsweetened, since the maple syrup is doing the sweetening work.
If you would like to keep the recipe entirely dairy-free, use a dairy-free cream cheese alternative and a plant-based yogurt in place of the cottage cheese. The texture will be slightly different, but the flavor profile stays intact, especially once the strawberries and vanilla are blended through.
This recipe multiplies effortlessly. Make three or four jars on Sunday, and they will keep in the fridge for up to four days. Store the graham cracker crumbs and fresh fruit separately and add them each morning just before eating, so the crackers stay crunchy and the fruit stays fresh. A batch of four jars takes about 20 minutes to prepare and solves breakfast for the entire work week.
