Low and slow in the Crockpot, a ranch dressing I actually love, and a finished wrap so colorful it honestly looks like art. Here’s how I make my favorite chicken bacon ranch wrap. I didn’t plan for this to become a Crockpot recipe. I started with the idea of a quick weeknight wrap: shredded chicken, crispy bacon, some greens, all rolled up with ranch.

But one Saturday, I had nowhere to be and a few chicken breast halves that needed using, so I threw them in the slow cooker and let time do the work. Hours later, I had the most tender, easy-to-shred chicken I’d ever made, and I’ve been doing it this way ever since.

I had it on low and slow for close to 8 hours, stirring every hour or two just to make sure nothing was sticking to the bottom. And here’s the thing: just doing that, just stirring occasionally, was enough to break the half breasts down into tiny chunks all on their own. So come shredding time, it was an absolute cake. No forks required, barely any effort. The chicken practically shredded itself.

Let’s Talk About the Ranch

I don’t actually like ranch dressing. I know. For a chicken bacon ranch wrap, that’s quite the admission. Most store-bought ranch tastes flat and artificial to me, and I’ve always preferred making my own dressings from scratch — a little buttermilk, some fresh dill, garlic, and a squeeze of lemon. INGREDIENTS

2 large boneless skinless chicken breasts (halved), half breasts work perfectly for the Crockpot; they break down beautifully.
½ tsp of garlic powder, rub directly onto the chicken before slow cooking.
½ tsp of onion powder, adds depth without overpowering the ranch.
¼ tsp of smoked paprika, gives subtle warmth and a little color.
Salt & black pepper to taste, season generously because the chicken soaks up a lot during cooking.
½ cup of chicken broth, keeps the chicken moist throughout the long slow cook.
½ cup of ranch dressing, Renée's Homestyle Ranch is my top pick, or use homemade ranch.
1 cup of cooked and chopped bacon, crisp it well because it holds up better inside the wrap.
8 oz of shredded mozzarella cheese, swap for cheddar or pepper jack for a bolder flavor.
1 cup of chopped iceberg lettuce, pat dry before adding because extra moisture leads to soggy wraps.
4 large flour tortillas, warm before rolling so they don’t crack or tear.

INSTRUCTIONS

Combine garlic powder, onion powder, paprika, salt, and pepper in a small bowl. Rub the mixture over all sides of the chicken breast halves don't rush this step, the seasoning is the foundation of your flavor.
Place the seasoned chicken in the Crockpot and add the broth. Set to low and cook for 7–8 hours. Stir every 1–2 hours — this alone is enough to start breaking the chicken into smaller pieces as it cooks. Don't rush it; the low-and-slow approach is what makes the shredding effortless.
Once the chicken has cooked through and starts falling apart, use two forks to finish shredding it inside the Crockpot. Because you've been stirring throughout, most of it will already be in small chunks — barely any work needed at this stage.
Drain any excess liquid from the shredded chicken. Transfer to a large bowl and add the ranch dressing, chopped bacon, and shredded mozzarella. Stir until well combined and everything is evenly coated in ranch.
Gently mix in the chopped, dried iceberg lettuce right before you're ready to assemble. Adding it last keeps it crisp and prevents moisture from making the tortilla soggy.
Microwave the tortillas for 30 seconds, flipping halfway through. Warm tortillas are pliable and roll without cracking — cold ones split at the edges.
Add one quarter of the filling to the center of each tortilla. Fold in the sides, then roll from the bottom up, keeping it tight. Secure both ends with a toothpick.
Cut each wrap in half on a diagonal. When you lay those two halves on a plate and see all the colors — the golden chicken, the bacon, the lettuce, the cheese — it genuinely looks like art. Serve immediately.

NOTES

Stir the Crockpot every 1–2 hours. You don’t need to hover over it, but a quick stir prevents sticking and naturally breaks the chicken down, so by the time you’re ready to shred, most of the work is already done.

Tips & Variations

Dry your lettuce thoroughly. Wet lettuce is the number one cause of soggy wraps. Use a salad spinner or pat it dry with paper towels before it goes in the bowl.
Don't skip the broth. Even just half a cup keeps the chicken moist and stops it from drying out during the long cook. The flavor it adds to the shredded chicken is worth it too.
Add the lettuce last. Mix the chicken, bacon, cheese, and ranch first — then fold the lettuce in right before assembling. This keeps it crisp and fresh, even if you're making wraps ahead.
Warm your tortillas. Thirty seconds in the microwave, flipping halfway, is all it takes. A warm tortilla rolls cleanly; a cold one cracks at the fold and ruins the whole thing.
Store the filling separately from the tortillas. The chicken ranch mixture keeps for up to 3 days in the fridge. Assemble fresh each time for wraps that never go soggy.
Homemade ranch dressing: Whisk together buttermilk, mayo, fresh dill, garlic, lemon juice, and salt for a from-scratch dressing that’s brighter and more herbaceous than bottled ranch. Best for weekends when you have a few extra minutes or when serving guests.
Crispy seared finish: After rolling, place the wrap seam-side down in a dry skillet over medium heat for 1–2 minutes per side until golden and sealed shut. Best for meal prep or when you want extra texture and a wrap that stays closed.
Pepper jack & hot sauce: Swap mozzarella for pepper jack and add a few dashes of hot sauce along with the ranch for a spicier version that completely changes the flavour profile. Best for spice lovers or anyone who finds the classic wrap too mild.
Rotisserie chicken shortcut: Skip the Crockpot entirely and use shredded store-bought rotisserie chicken tossed with ranch and seasoning. It’s ready in about 15 minutes. Best for busy weeknights or last-minute meals.
Cheddar & romaine swap: Replace mozzarella with sharp cheddar and use romaine instead of iceberg for more flavor and crunch. Best for anyone wanting a heartier wrap with extra bite.
