½ cup raspberry vinegar
A cup of apple cider
½ cup brown sugar
2 star anise
2 cinnamon sticks
1 strip orange peel
5 whole cloves
Salt and black pepper to taste

INSTRUCTIONS

Heat the butter in a medium saucepan over medium heat.
Add the sliced cabbage and onion, then cook for 2 minutes until just beginning to soften.
Pour in the raspberry vinegar and cook for another 2 minutes, stirring until the cabbage turns a vibrant purple.
Add the apple cider, brown sugar, star anise, cinnamon sticks, orange peel and cloves.
Cover and simmer for 20 to 25 minutes until the cabbage is tender.
Remove the whole spices, season with salt and black pepper, then serve warm.
