It’s one of those grown-up things with developed palates. We’ve started to appreciate vegetables more, especially broccoli. One of my favorite ways to enjoy it is in a stuffed chicken broccoli dinner.

With 420 calories and 48 grams of protein, broccoli-stuffed chicken is ready in just 40 minutes. A baked chicken breast filled with cheese and broccoli, which is also a medium-low-carb dinner? A win-win for all.

The Filling Is the Star

Rich protein sources like chicken breast are bland but often great bases to create rich flavors. The filling is also the main highlight of broccoli stuffed chicken. Here, we will use steamed broccoli, cream cheese, some sharp cheddar and a hint of garlic to keep the chicken fresh and juicy inside out.

The Cutting Talent

To make the chicken broccoli combination work, you need to get the pocket right. It should be deep enough to hold the filling without cutting the breast all the way through. Try this horizontal slice technique:

  1. Lay the chicken flat on a cutting board. Pat it dry completely so the knife doesn’t slip due to moisture.
  2. Place a hand flat on top, not too firmly but not too loose.
  3. Run a sharp knife parallel to the cutting board. Insert the tip of the knife into the thickest part of the chicken breast, ideally in the middle. ,
  4. Stop around half or an inch before cutting all the way through to keep the filling from leaking out the back.

The Butterfly Method

If you’re not getting the pocket right, it’s okay. Just cut the chicken breast all the way through to make it one big fillet. Open it up like a book and pound it to make it thin. Add the filling, then roll it in the shape of a pinwheel.

INGREDIENTS

4 large boneless skinless chicken breasts
2 cups of broccoli florets, finely chopped
4 oz of softened ream cheese
1 cup of shredded sharp cheddar
Minced 3 cloves of garlic
2 tbsp olive oil
1 tsp of smoked paprika
1/2 tsp of garlic powder
Salt and black pepper to taste
8-12 toothpicks

INSTRUCTIONS

To make the filling, combine softened cream cheese, shredded cheddar, minced garlic, and finely chopped steamed broccoli in a bowl. Season with salt and pepper and mix until smooth and well combined. The filling should be thick enough to hold its shape.
Place each chicken breast flat on a board. Using a sharp knife, cut a horizontal pocket into the thickest side, go deep but stop about ½ inch from the opposite edge. You want a generous pocket without cutting all the way through.
For seasoning the chicken, combine smoked paprika, garlic powder, salt, and pepper. Rub the mixture all over the outside of each breast, including inside the pocket.
To stuff and seal, spoon one quarter of the filling into each pocket. Don't overfill — the filling expands as it heats. Press the opening closed and secure with 2–3 toothpicks per breast.
To sear in skillet, heat olive oil in an oven-safe skillet over medium-high. Sear the stuffed chicken for 2–3 minutes per side until golden brown. This builds a crust and seals in the juices before the oven finishes the job.
Transfer the skillet to a 200°C / 400°F oven and bake for 18–22 minutes until the internal temperature reaches 75°C / 165°F. Rest for 5 minutes before removing the toothpicks and serving.

NOTES

Sear before you bake. This step is optional in theory but non-negotiable in practice. The golden crust you get from a hot skillet makes a huge difference to both flavor and texture.

Tips & Variations

Try replacing broccoli and cheddar with wilted spinach and ricotta cheese. Add a pinch of nutmeg for a classic Italian flavor profile
The Mediterranean swap: Swap the broccoli filling for chopped sun-dried tomatoes, fresh basil, and shredded mozzarella to make a chicken caprese in pocket form
For a pop! Mix cream cheese with diced pickled jalapeños, crumbled bacon, and cheddar for a spicy, smoky filling that tastes exactly like a jalapeño popper.
For a fall dinner, sauté diced mushrooms with garlic and thyme until dry, then combine with shredded Swiss cheese for a deeply savory, earthy filling
You can also skip the sear and oven and cook the stuffed chicken in an air fryer at 190°C / 375°F for 18–20 minutes, flipping halfway through, for a crispy exterior without heating up the whole kitchen
